The caviar of edible insects
These large caliber ants, measuring on average 3-centimeter long, are called hormigas culonas in Spanish, "big bottom ants" because they have a highly developed abdomen, a characteristic of the species Atta laevigata. These insects, very popular in Latin America, are mainly encountered in western Colombia, especially in the Santander region and in eastern Venezuela. The Guanes people were the first to enjoy this natural treasure. Indeed, they used this insect so special for its delicious taste, between peanut and chocolate, but also for its aphrodisiac qualities.
A traditional production
Colombian ants are simply roasted and lightly salted. They come from farms where they are raised in semi-wild: Colombian farmers levy individuals in the wild colonies they then implanted on their land. Thus, the natural balance of ecosystems is maintained. This is a traditional practice specific to the Santander region which is famous throughout Latin America for its "caviar" unique. To promote their industry and maintain prices at fair levels, producers are organized into cooperatives. This is one of them that has become the exclusive provider of Insectéo.
